THE SILVERSEA
WINE SELECTION
There has been an ever-increasing sophistication in contemporary attitudes towards wine in the space of
the last generation. Nowhere are these attitudes towards the civilized pleasures of wine more marked or
apparent than amongst our guests on board. As you sail towards the most exotic destinations our planet
has to offer on board these sleek, white-hulled vessels, you can be assured that the same care arid
attention will be directed toward the wines that our chefs will lavish on their award-winning cuisine.
Every evening our Head Somme]ier, working in close co-operation with the Chef de Qjisine, will feature
one white wine and one red wine from the complimentary selection to accompany the evening’s menu.
However, acknowledging individuality of taste we will be pleased to offer you your choke of any of the
Silversea Selection at any time, In order to provide guests with an authentic oenological insight to the
areas that Silversea ~ssels sail to our Sommelier will arrange local wines to be offered to guests on
selected sailings.
There are added grace notes of elegance and civility attached to a meal served in the Restaurant on board
when it is accompanied by a bottle of fine wine. In addition to the array of fine wines served on a
complimentary basis, Silversea Cruises takes much pride and no small degrec of pleasure in bringing to
your attention its Connoisseur’s Reserve List.
Hugh Johnson, that most lyrical and imaginative 0f English wine ‘writers, once remarked that “everyone
should try one of the world’s great wines at least once a year just to remind oneself of all the poetry and
magic that such a bottle brings”.
This list has been devised to allow Silvetsea guests the opportimityto do exactly that! Reflecting both the
European heritage and the worldwide itineraries of these gracious vessels, you will find within these pages
an artfully chosen and impeccably cellared selection drawn from the most prestigious chateaux and estates
of the wine world.
We have been extremely fortunate to purchase direct from the private cellars of some of the most
distinguished vineyard owners and negociants. In most cases, the wines selected are irreplaceable and,
because of their rarity available in very limited quantities. You will discover as you bro~e through the
list, with its sympathetic descriptions and vintage comments, that Silversea Cruises have taken the most
extraordinary care to ensure that only the finest vintages of the greatest estates are represented here.
We invite you to take a journey of wonder arid imagination in these pages through the great wine regions
of France, Italy and Germany and on to the New World where California and Australia’s great wines are
throwing out their challenge to the world. The extraordinary selection of great vintages you will find
within these pages is offered as an extra facility to Silversea guests and is priced at a level that no other
restaurant or hotel could afford to match.
Our Head Sommelier will be delighted to offer you whatever guidance you feel you may require in
making a selection from this list.
Every effort has been made to ensure the correctness of our wine list. However, some of the wines
are in short supply and may not be available during the later stages of the voyage.
SILVERSEA SERVES UP A NEW DISH:
THE VIKING COOKING SCHOOL
(Ft. Lauderdale, FL -- August 14, 2007) Ultra-luxury Silversea Cruises is expanding its enrichment palette this month with the official launch of the Viking Cooking School Aboard Silversea.
Developed through the company's unique partnership with Viking Range Corporation, whose ultra-premium appliances grace the luxury kitchens of those who truly enjoy the finer things in life, the Viking Cooking School on each Silversea ship features a custom-designed demonstration culinary theater equipped with state-of-the-art induction stove, sophisticated convection-microwave oven and Viking professional-caliber cookware, cutlery and countertop appliances -- plus a large rear projection screen so guests can easily view different cooking techniques and utensils.
A cornerstone of the alliance between the two luxury brands is the exclusive Viking Cooking School culinary curriculum presented to Silversea guests on select voyages hosted by Viking chefs. The curriculum for each cruise is carefully designed to echo the cultural flavor of the ship's itinerary. Highlights include cooking demonstrations with wine pairings and interactive Q&A sessions; a "Lunch and Learn" event giving groups of 12-16 guests a chance to sample a delicious meal of specially prepared dishes; and a "Market to the Plate" experience (offered on certain voyages when the itinerary permits) that provides an escorted tour of a local market followed by a cooking class.
"This alliance was a natural one for us and we are thrilled to be the only cruise line to partner with this renowned luxury company," said Erling Frydenberg, Silversea's chief operations officer. "There are land-based Viking Cooking Schools in select cities, but our ships are the first in the cruise industry to present the exclusive Viking curriculum in custom-designed culinary theaters at sea."
Added Frydenberg, "Many of our guests have Viking appliances at home, so the interactive cooking demonstrations not only entertain and educate, but are a great opportunity for guests to ask questions and learn more about how to get the most benefits from their own high-performance culinary equipment."
All Viking instructors are accomplished chefs and culinary industry leaders who bring many years of expertise and knowledge to the classroom. When Viking chefs are not on board, the culinary theaters serve as venues for the international guest chefs of Relais & Chateaux to show off their extraordinary talents on select Culinary Arts cruises. On all other voyages, Silversea's own master chefs take the stage to host cooking demonstrations and dynamic competitions.
